Dairy-Free Vanilla Brownies

I use barley flour from Bob’s Red Mill®. Add organic chocolate chips or blueberries to add sweetness and yum-ness.

Ingredients

  • 2 eggs, beaten
  • ¼ cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1 cup barley flour
  • ¾ cup white sugar
  • 2 teaspoons baking powder
  • ¾ teaspoon salt

Directions

Step 1
Preheat oven to 400 degrees F (200 degrees C). Grease a small baking dish.

Step 2
Beat eggs, vegetable oil, and vanilla extract together in a large bowl. Mix barley flour, sugar, baking powder, and salt together in a separate bowl; add to eggs mixture and stir to make a smooth batter. Pour batter into prepared baking dish.

Step 3
Bake in preheated oven until brown on top and set in the center, 20 to 30 minutes.

Cook’s Note:

Double recipe to make standard size pan.

    Batter was a little dry so I added 1 tablespoon of water, then chopped nuts and some chocolate chips. Baked for 43 min. then topped with melted choco chips. It was okay but I don’t think I will make it again as husband didn’t like the taste.

    It was dry. Instead of adding water into the mixture I added an additional egg, and I reduced the heat down to 350?. I cooked them for 30 minutes.
    They seemed nutty. Not bad, but I don’t know if I’ll make them again.

    i wanna make the vanilla brownies taste good because my mother cannot have eggs or regular milk
