This carrot cucumber slaw is easy and fast to make. A new twist that is healthier than a basic slaw.
Ingredients
- 2 cucumbers – quartered, seeded, and thinly sliced
- 2 carrots, shredded
- ¼ onion, grated
- 2 tablespoons white sugar
- 1 ½ teaspoons ground coriander
- 1 teaspoon kosher salt
- ½ teaspoon coarse ground black pepper
- ¼ cup apple cider vinegar
Directions
Step 1
Combine cucumbers, carrots, onion, sugar, coriander, salt, and black pepper together in a bowl; add vinegar and mix well.
Tips
Tastes great right when you make it, but letting it sit for at least an hour will blend the flavors best. This is also a great way to use up all those cucumbers growing in your garden.
