An unusual combination of ingredients in this Cuban chicken recipe. Yummy! Serve over rice. You can put rice into the pot to cook with everything else, but add 2 cups of chicken broth and simmer for 20 minutes until the rice is done. One fewer pot to wash!

- 1 onion, chopped
- 3 cloves garlic, chopped
- 1 (14.5 ounce) can diced tomatoes
- 1 (12 ounce) can chicken chunks, drained

- ½ cup stuffed green olives, sliced
- 1 tablespoon red wine vinegar

Cook’s Note:
You can put rice into the pot to cook with everything else, but add 2 cups of chicken broth and simmer for 20 minutes until the rice is done. One fewer pot to wash!
