This Irish potato soup is rich, creamy, and subtly flavored with celery and green onions. You’ll want to savor it slowly!
Ingredients
- 2 tablespoons butter or margarine
- 4 medium green onions, sliced
- 1 stalk celery, sliced
- 3 medium potatoes, peeled and sliced 1/4 inch thick
- 1 ¾ cups Swanson® Chicken Broth or Swanson® Certified Organic Chicken Broth or Swanson® Natural Goodness® Chicken Broth
- 1/8 teaspoon ground black pepper
- 1 ½ cups milk
Directions
Step 1
Melt butter in a 3-quart saucepan over medium heat. Add green onions and celery; cook and stir until onion is translucent, 5 to 7 minutes.
Step 2
Add potatoes, broth, and pepper; bring to a boil. Reduce the heat to low, cover, and simmer until potatoes are tender, about 15 minutes. Add milk and blend with an immersion blender until smooth. Continue to cook until heated through, 3 to 5 more minutes.
