These cranberry sauce cookies are very yummy. Try different fruits or jams to change the flavor.
Ingredients
- 2 cups all-purpose flour
- ¾ cup white sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¾ cup butter, cold and cubed
- 1 large egg, beaten
- 2 cups cranberry sauce
Directions
Step 1
Preheat the oven to 350 degrees F (175 degrees C).
Step 2
In a large bowl, stir together flour, sugar, baking powder, and salt. Cut in butter with 2 knives or a pastry blender until lumps are no larger than peas. Stir in beaten egg lightly, allowing flour mixture to stay somewhat crumbly.
Step 3
Sprinkle 1/2 of the flour mixture in an even layer in the bottom of a 9×13-inch baking dish. Pack down into a solid crust. Spread cranberry sauce over crust. Crumble remaining flour mixture over cranberry sauce.
Step 4
Bake in the preheated oven until the top is golden brown, about 40 minutes. Cool completely before slicing into 15 bars.
Tips
You can replace up to 1/2 of the flour with whole wheat flour.
