?Great recipe,? according to Emily Brown Long. ?I left out the celery and added a small peeled apple instead. I find that it really helps if you use some of the excess pineapple juice in the blender with the cranberries first.?

Ingredients

  • 2 cups cranberries
  • 1 large orange, cut into small pieces
  • 1 cup white sugar
  • 1 cup chopped celery
  • 1 cup finely chopped walnuts
  • 1 cup crushed pineapple, drained
  • 1 (3 ounce) package cranberry (or raspberry) flavored Jell-O mix
  • 2 cups hot water

Directions

Step 1
Place cranberries, orange (including rind), and sugar in a food processor. Process together until the cranberries and orange are roughly ground and well combined with sugar. Transfer to a bowl. Stir in celery, walnuts, and pineapple until thoroughly mixed.

Step 2
Place gelatin in a bowl and pour hot water over top (don't let stand). Whisk together to dissolve. Pour gelatin over the cranberry mixture. Stir to combine.

Step 3
Pour into the mold of your choice and chill until you are ready to serve.
