This Jack cookie recipe dates back to at least the 30s. Still tastes great today!
Ingredients
- 1 cup butter
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 pinch salt
- 2 cups quick cooking oats
- 1 ½ cups flaked coconut
- 2 cups crisp rice cereal
- 1 ½ cups chopped salted peanuts
Directions
Step 1
Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
Step 2
In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs, one at a time, then stir in vanilla. Sift together flour, baking soda, baking powder, and salt; stir into creamed mixture. Gently stir in oatmeal, coconut, rice cereal, and chopped peanuts.
Step 3
Drop dough by teaspoonfuls onto the prepared cookie sheets. Bake for 10 to 12 minutes in the preheated oven. Remove from cookie sheets to cool on wire racks.
