The flavor of these coconut rum balls improves after 24 hours. These candies may be made ahead and stored in the refrigerator.
Ingredients
- 1 (12 ounce) package vanilla wafers, finely crushed
- 2 1/3 cups flaked coconut, divided
- 1 cup finely chopped walnuts
- 1 (14 ounce) can sweetened condensed milk
- ¼ cup rum
Directions
Step 1
Toss crushed wafers, 1 1/3 cups coconut, and walnuts together in a large bowl. Stir in condensed milk and rum; mix well. Cover and refrigerate for 4 hours.
Step 2
Place remaining 1 cup coconut in a bowl. Roll chilled dough into 1-inch balls, then roll each ball in coconut to coat. Store in a tightly covered container in the refrigerator.
Tips
Roll in confectioners' sugar instead of coconut if you prefer.
