This homemade chicken and rice soup is made form scratch with my fast chicken soup base recipe, which knocks hours off of the cooking time usually needed for this kind of soup.
Ingredients
- 1 recipe Fast Chicken Soup Base
- ¾ cup long-grain white rice
- 1 cup frozen green peas
- ½ cup chopped fresh parsley
- salt and freshly ground black pepper to taste
Directions
Step 1
Prepare the Fast Chicken Soup Base. Bring to a simmer.
Step 2
Add rice; simmer until tender, 10 to 20 minutes.
Step 3
Stir in green peas and parsley. Season with salt and pepper.
