I created this cilantro-lime dressing after having a delicious grilled chicken salad at TGI Friday’s. I was determined to figure out how to make their cilantro-lime dressing, and this is what I came up with. Serve it over a hearty green salad topped with grilled chicken.
Ingredients
- 1 medium jalapeno pepper, seeded and coarsely chopped
- 1 clove garlic
- ¾ teaspoon minced fresh ginger root
- 1/3 cup honey
- ¼ cup lime juice
- ¼ cup packed cilantro leaves
- 2 teaspoons balsamic vinegar
- ½ teaspoon salt, or to taste
- ½ cup extra-virgin olive oil
Directions
Step 1
Pulse jalape?o, garlic, and ginger in a food processor until finely chopped. Add honey, lime juice, cilantro, vinegar, and salt; pulse 3 to 4 times to blend. Pour oil in slowly, with the processor running, until dressing is smooth. Taste and season with salt if needed before serving.
