This baked chicken and mushrooms is one of the best ways that I have ever prepared chicken. This recipe has been requested many times after I have served it. Serve over hot cooked rice or noodles.
Ingredients
- 3 cups sliced mushrooms
- 2 large eggs, beaten
- 1 cup seasoned bread crumbs
- 4 skinless, boneless chicken breast halves
- 2 tablespoons butter
- 6 ounces mozzarella cheese, sliced
- ¾ cup chicken broth
Directions
Step 1
Preheat the oven to 350 degrees F (175 degrees C).
Step 2
Place 1/2 of the mushrooms in a 9×13-inch pan.
Step 3
Add eggs to a shallow dish. Add bread crumbs to a second shallow dish. Dip chicken into beaten eggs, then roll in bread crumbs. Melt butter in a skillet over medium heat. Brown chicken on both sides.
Step 4
Place chicken on top of mushrooms in the pan. Arrange remaining mushrooms over chicken and top with mozzarella cheese. Add chicken broth to the pan.
Step 5
Bake in the preheated oven until chicken is no longer pink and juices run clear, 30 to 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
