This cherry chocolate cake is rich, moist, and a favorite of my two grown sons. The cake is made from scratch and it keeps very well.

Ingredients

  • 1 ½ cups white sugar
  • ½ cup butter
  • 2 eggs
  • 1 teaspoon almond extract
  • ½ cup unsweetened cocoa powder
  • 1 ¾ cups cake flour
  • 1 ¼ teaspoons baking soda
  • 1 teaspoon salt
  • 1 (21 ounce) can cherry pie filling

Directions

Step 1
Preheat the oven to 350 degrees F (175 degrees C). Lightly grease and flour one 9×13-inch baking pan.

Step 2
Beat sugar and butter together in a large bowl with an electric mixer until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in vanilla extract. Add cocoa powder and mix until well combined.

Step 3
Combine cake flour, baking soda, and salt in a separate bowl; add flour mixture to butter mixture and mix until just combined. Stir in cherry pie filling. Pour batter into the prepared pan.

Step 4
Bake in the preheated oven until a toothpick inserted near the middle comes out clean, 30 to 35 minutes.
