This is an interesting combination of ingredients, but it’s delicious! I make it for every BBQ and at the end of the night I’m writing down the recipe for everyone! Try it, you’ll definitely like it!

Ingredients

  • 8 cups fresh broccoli florets
  • 2 cups fresh strawberries, quartered
  • 1 (8 ounce) package Colby-Monterey Jack cheese, cut into 1/2-cubes
  • 1 cup mayonnaise
  • 2 tablespoons white sugar
  • 1 teaspoon cider vinegar
  • ¼ cup sliced almonds, toasted

Directions

Step 1
Combine broccoli, strawberries, and Colby-Monterey Jack cheese in a large bowl. Whisk mayonnaise, sugar, and vinegar together in another bowl until blended; pour over broccoli mixture. Sprinkle almonds over broccoli salad and gently toss to coat. Cover with plastic wrap and refrigerate until chilled, 1 to 2 hours.

    I used broccoli, cauliflower, carrots (shredded), and strawberries. I also used vegan mayo and varied carrot colors which gave nice varied color for salad.

    02-29-16 ~ Great salad! I thought the combination of broccoli and strawberries sounded a little odd, but it works. And……it works, well! I made this up, as written, in the morning. At dinner time I toasted the almonds and added them before serving. The flavors blended nicely in this dish. Next time I might add some diced red onion. Served this as the side to ‘Buffalo Chicken Wraps’ from AR, along with cucumber slices and cooked carrots.

    This is a great salad for picnics. Always a big hit! I omit the almonds as I am not a big fan of almonds. Instead of almonds, I add crumbled bacon and golden raisins….. FABULOUS!

    This got mixed reviews. I liked it a lot, my daughter thought it was “weird”, and the other two people thought it was OK. I’ll make it again.
