This Bisquick coffee cake is better than any you’d get at a bakery. It took me a while to get this recipe just right.
Ingredients
Topping
- 2/3 cup baking mix (such as Bisquick®)
- 2/3 cup brown sugar
- 4 tablespoons unsalted butter, cut into pieces
- ½ teaspoon ground cinnamon
Cake
- 2 cups baking mix (such as Bisquick®)
- 2/3 cup milk
- 1 large egg
- 2 tablespoons white sugar
- ¼ teaspoon ground cinnamon
Directions
Step 1
Preheat the oven to 400 degrees F (200 degrees C). Grease a 9-inch square baking dish.
Step 2
Make the cake: Mix baking mix, milk, egg, sugar, and cinnamon together in a bowl until well combined; spread into the bottom of the prepared baking dish.
Step 3
Make the topping: Mix baking mix, brown sugar, butter, and cinnamon together in a separate bowl using a fork or pastry blender until crumbly. Sprinkle evenly over batter, then drag a butter knife across the top in a crisscross pattern.
Step 4
Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes.
Tips
You can use water instead of milk if desired. This will also work in an 8-inch baking dish.
