Best Sausage Gravy and Biscuits

Ingredients

  • 1 pound bulk country sausage
  • 2 tablespoons butter
  • ¼ cup all-purpose flour
  • 2 ½ cups milk, or more as needed
  • 2 teaspoons hot sauce
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt
  • 6 hot biscuits, split

Directions

Step 1
Heat sausage in a large skillet over medium-high heat. Cook, crumbling with a spoon and stirring often, until browned and cooked through, 5 to 7 minutes.

Step 2
Add butter to skillet and melt. Sprinkle flour evenly over skillet and stir for 1 minute. Whisk in 2 1/2 cups milk and scrape up any bits off the bottom of the skillet. Bring mixture to a simmer.

Step 3
Reduce heat to low and cook, stirring often, until thickened, about 10 minutes. If mixture becomes too thick, thin slightly by adding more milk or water. Season with hot sauce, pepper, and salt; cook for 1 more minute.

Step 4
Serve immediately over hot biscuits.

Cook’s Notes:

For an added spicy kick, feel free to substitute hot country sausage for regular.

    Really? This was deemed “best” enuff to be in my in box today. Alton Brown nailed this years ago and his great grand ma probably made it this way 100yrs B4 that. # of breakfast sausage (you need 1/4 cup rendered fat or add butter or oil to make that amount), 1/4 cup flour, 2 cups milk and what ever else you want to throw in. The basic recipe is 5 star classic. Nothing special to this version.

    Unless you bought the world’s leanest sausage, this gravy will have WAY too much sausage grease in it. Recommend some be drained off before adding the flour and proceeding. Otherwise, a pretty good variation on the basic recipe. The hot sauce adds a little heat, plus the slight touch of vinegar flavor mentioned in the pep talk.

    Delish. Although initial description mentions a slight Vinegar taste although ingredients list does not mention vinegar so I did not add vinegar other than that it was divine.

    The recipe sounds pretty basic and delicious, but maybe a bit misleading to say it has a kick of vinegar without explaining that the vinegar is in the hot sauce. See @amhorning’s comment.

    pretty much same way I make mine. To the person asking about the vinegar it is coming from the hot sauce. I don’t want to be that person but I have to say this is called best biscuits and gravy recipe but it is mainly just the gravy recipe no biscuit recipe. Thanks for sharing!

    When it called for the sausage cooked in a large skillet and then add butter to the skillet. I drained the grease in a container. I can’t imagine putting butter into a skillet full of grease.

    I skipped the hot sauce personally and thought this was otherwise perfect. Now I don’t have to wait for my next trip back home to enjoy Mom’s biscuits and gravy

    My whole family loved it! The only thing I did different was I used hot Italian sausage because that was what I had on hand. It was delicious ??

    Loved it! I only used 1 teaspoon of hot sauce. We thought it was perfect. Best flavor.

    This is in my opinion not that great, just bland. Let me give you a couple pointers here, First off i use two pounds of meat, use part milk the other part whipping cream, Onions, none in their recipe, i dice up about half of one, only use one teaspoon of butter to cook the onion in, Garlic you need 2 cloves , then the dry stuff salt pepper, red cayenne pepper, i add Franks Red Hot in the milk , stir it up good. You have never had such a Rich and Creamy Gravy ever !!!

    I’ve made this recipe many times. I do tend to use more black pepper (making it a pepper gravy), or sweet Hungarian paprika for a less common kick.
