Best Ever Russian Beef Stroganoff

Being of Norwegian descent, I really don’t know how this Russian beef stroganoff came into the family. My grandma has made this recipe for 50 years that I know of and it is truly my favorite. Serve over noodles. For a wintertime comfort food this is the best. I actually like it so much that my wife and I will have this for dinner and the next morning we will eat the leftovers with a couple of eggs on the side for brunch. You can’t beat it!

Ingredients

  • 3 tablespoons all-purpose flour
  • ¾ teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 pound beef sirloin, cut into 1/4-inch wide strips
  • 3 tablespoons butter
  • 1 cup thinly sliced mushrooms
  • ½ cup chopped onion
  • 1 clove garlic, minced, or more to taste
  • 1 tablespoon tomato paste
  • 1 ¼ cups cold beef stock
  • 1 cup sour cream
  • 3 tablespoons cooking sherry

Directions

Step 1
Combine 1 1/2 tablespoons flour with salt and pepper in a bowl. Dredge beef strips in the mixture.

Step 2
Melt 3 tablespoons butter in a skillet over medium heat. Add the dredged beef strips; cook and stir until browned, about 5 minutes. Add mushrooms, onion, and garlic; cook until onion is barely tender, 3 to 4 minutes. Transfer the beef and mushroom mixture to a plate.

Step 3
Melt remaining butter in the same skillet; reduce heat to low. Stir in 3 tablespoons flour and tomato paste; cook until slightly browned, 1 to 2 minutes. Increase heat to medium. Add beef stock slowly, stirring constantly, until gravy is thickened and no lumps remain, 5 to 10 minutes.

Step 4
Return the beef and mushroom mixture to the skillet with the gravy. Stir in sour cream and sherry; heat until bubbling, about 5 minutes.

Recipe Tip

Cr?me fra?che can be substituted for the sour cream.

    By far one of the better Beef Stroganoff recipes we have tried. I enjoyed making it, and while it is a bit labor intensive, it is still a relatively quick and deeply satisfying meal. Next time around I will start by adding a Half Cup of Sour Cream and adjust from there. I feel that one cup of sour cream covered up some of the great flavors that were building through the process. Thank you!

    I’ve always made it this way. I don’t usually have Sherry, so I sometimes use a dry red wine and some Worcestershire. I never use cooking wine or cooking Sherry though.

    My only experience with beef stroganoff over the years has sadly been though TV dinners; but I liked it anyway. Finally, as an adult and a father, I had my 8 year old (two nights before her 9th birthday) make this recipe with me and my own grandmother.

    It was helpful to have my grandmother present while making the gravy, because I?d seen her make various gravies in the past, but never done one myself. We almost lost it, but her help saved us. That part is VERY time-sensitive.

    Overall it was good, but I must say that it wasn?t a ?best ever? recipe. I?ll need to play with it in the future to make it stand out more. All four kids were ?OK? with it (one basically just ate the steak).

    Definitely a recipe to try again, but as a base with modifications performed.

    Wonderfully creamy and delicious. A favorite go too when the wind is howling and the snow is blowing!

    The kids loved this, however I did not have sherry, so I used 1/2 cup of beer. It still worked well.

    Will definitely make this again.

    I followed the recipe as written, but I used NY steaks because that?s what we had in our freezer.

    I used what I had – hamburger and chicken bone broth – and didn’t have sour cream 🙁 so I substituted greek yogurt . I stirred in 1 generous teaspoon of Tarragon toward the end. SUPER yummy and definitely a permanent replacement for the old recipe! My picky father-in-law gave it a thumbs up!

    Not bad but not great. Was lacking in flavor and just not what I was looking for in a recipe for stroganoff . Hubby decided this recipe was definitely the not a keeper.

    I made it with and without the tomato paste and liked both equally well. I did add a small amount of finely chopped garlic. don’t worry I add garlic to almost any recipe MAYBE EXCEPT PIES OR CAKES!!!

    Overall this was a good recipe. Loved making the gravy for it! I?m giving 3 stars instead of 5 because I found it slightly bland without adding extra to it, and had to wing it a little after tasting it.
    I made a few changes. I used ground beef cooked with a little flour, Salt, and pepper. I added another 1/4 tsp of salt at the end, another 1/4 cup beef broth to thin it a little more, 6 cloves of garlic in total (we love garlic) and, another 1/2 tsp worcestershire. I did 2 tbsp Sherry and tbsp off the Worcestershire to start instead of all sherry. Family?s general consensus is that they?re uncertain of the tangy flavor, but it?s okay. I liked it enough to eat it again, but it wasn?t my favorite.

    I loved it. Easy to make, and my daughter who HATES mushrooms, actually ate this which for me was a total WIN??
