Best Broccoli Salad Ever!

This is a delightful, cool, and crisp salad with healthy fruits, vegetables, and nuts that is a great accompaniment to any entree. It’s a real favorite with anyone who tries it. This is a fun recipe as you can get creative with it. I have even made it with out the sunflower seeds, and it was still delicious.

Ingredients

Dressing

  • 1 cup mayonnaise
  • 3 tablespoons cider vinegar
  • 3 tablespoons white sugar

Salad

  • 2 crowns broccoli, cut into bite-size pieces
  • 1 cup seedless red grapes, halved
  • ¾ cup chopped walnuts
  • ¼ red onion, finely chopped
  • ¼ cup sunflower seed kernels
  • ½ cup sweetened dried cranberries (such as Craisins®)
  • ¼ cup bacon bits

Directions

Step 1
Whisk mayonnaise, cider vinegar, and sugar together in a small bowl until sugar dissolves and the dressing is smooth.

Step 2
Toss broccoli, grapes, walnuts, red onion, sunflower seeds, cranberries, and bacon bits together in a large bowl. Drizzle dressing over the salad and gently fold so ingredients are evenly coated.

Step 3
Cover bowl with plastic wrap and refrigerate 3 to 4 hours. Stir before serving.

Cook’s Notes:

You can use gold or regular raisins instead of Craisins(R).

    I liked this salad but it is a fairly standard recipe for this type of salad (which I expected…no problem.) I do wish AR would list broccoli in cups (and a lot of other ingredients, especially fruits and vegetables). I buy big bags of broccoli florets at Sam’s. Even if I did buy crowns, they vary a lot in size and in the amount of florets provided. I don’t fault this recipe, just wish AR would standardize. I used two cups bite-sized broccoli florets, thinking that 2:1 would be a good ratio between broccoli and grapes. I also cut the grapes in half.

    The yield for the dressing is high so be sure to mix everything else before slowly adding the dressing as you don’t need much for one head of broccoli.

    This is the best raw broccoli salad ever created… I added 1/2 c bacon bits instead and a tad more sunflower seed kernels.

    Loved it just as written.
    The second time I made it I didn’t have grapes so I added extra dried cranberries and it was delicious.
