Ingredients

  • 2 ¼ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1/3 cup shortening
  • 1 cup white sugar
  • 2 eggs
  • ½ teaspoon vanilla extract
  • ¼ teaspoon lemon extract
  • 3 ripe bananas, mashed
  • ½ cup ground walnuts

Directions

Step 1
Preheat the oven to 350 degrees F (175 degrees C). Lightly grease baking sheets or line with parchment paper.

Step 2
Mix flour, baking powder, and salt together in a bowl.

Step 3
In a large bowl, cream shortening and sugar. Beat in eggs, vanilla, and lemon extract, then beat in bananas and walnuts. Gradually mix in dry ingredients. Drop spoonfuls of dough onto the prepared baking sheets.

Step 4
Bake in the preheated oven until lightly colored, 12 to 15 minutes. Transfer to wire racks to cool.

Tips

For a different twist, try using 1/2 cup toasted sesame seeds in place of the nuts.
