Baked Gochujang Chicken Thighs

These chicken thighs are baked with gochujang, a Korean red chili paste that is tangy, salty, and very hot. The heat in this sauce is moderated by sesame oil, rice wine vinegar, honey, soy sauce, ginger, and garlic. If you like it hot, simply add more gochujang until your taste buds yell, “Uncle!” We like this with simple steamed broccoli and white rice.

Ingredients

  • 1 tablespoon gochujang paste, or to taste
  • 2 teaspoons rice wine vinegar
  • 2 teaspoons honey
  • 1 teaspoon sesame oil
  • 1 teaspoon soy sauce
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 8 boneless, skinless chicken thighs
  • fresh cilantro, or to taste
  • 1 tablespoon sesame seeds
  • 1 lime, sliced

Directions

Step 1
Preheat the oven to 375 degrees F (190 degrees C). Line a sheet pan with aluminum foil; place a baking rack on the foil.

Step 2
Whisk gochujang paste, rice vinegar, honey, sesame oil, soy sauce, ginger, and garlic powder together in a small bowl to make a sauce.

Step 3
Pat chicken dry with paper towels; brush both sides of chicken pieces with sauce. Place chicken on the rack in the prepared pan.

Step 4
Bake chicken in the preheated oven, until chicken is no longer pink in the center and juices run clear, 30 to 35 minutes. An instant-read thermometer should read at least 165 degrees F (74 degrees C). Sprinkle with cilantro and sesame seeds, and serve with lime wedges.

Cook’s Note:

Gochujang and soy sauce are very salty. To keep salt levels down, there is no added salt in this recipe.
