This baked whole lobster is stuffed with buttery crackers in this fresh recipe. Great for Valentine’s Day!
Ingredients
- 1 (1 1/2 pound) fresh lobster
- ½ cup butter, melted and divided
- 1 cup crushed buttery round crackers
Directions
Step 1
Preheat the oven to 400 degrees F (200 degrees C). Plunge the tip of a sharp knife straight down just behind lobster's eyes to humanely kill crustacean.
Step 2
Place lobster on its back and use a sharp knife to cut open the cavity. Remove the stomach and intestines, and discard. Reserve tomalley in a small bowl. Mix cracker crumbs with tomalley and spoon mixture into body cavity. Drizzle about 2 teaspoons of butter over top. Place lobster in a 2-inch-deep baking dish.
Step 3
Bake lobster for 30 minutes, uncovered.
Step 4
Turn on the oven's broiler and cook for 3 to 5 minutes just to toast crackers before serving. Serve with remaining melted butter.
