Baileys Irish Cream Brownies

This is a family recipe for Baileys brownies that I have been serving as a party dessert for years. They are gooey and super sweet. If you have a sweet tooth like me, this recipe is for you. Serve these brownies at your next party — or keep them all for yourself.

Ingredients

Frosting

  • 1 cup unsalted butter, softened
  • 5 tablespoons Irish cream liqueur (such as Baileys®)
  • 4 cups confectioners' sugar, or as needed

Brownies

  • 2 (18 ounce) packages fudge brownie mix (such as Duncan Hines®)
  • 1 cup Irish cream liqueur (such as Baileys®)
  • 2/3 cup vegetable oil
  • 2 large eggs

Directions

Step 1
Preheat the oven to 350 degrees F (175 degrees C). Butter the bottom of a 10 1/2×15 1/2-inch jelly roll pan.

Step 2
Make the brownies: Empty both brownie mix packages into a large bowl. Add Irish cream liqueur, oil, and eggs; beat with an electric mixer until smooth. Spread batter into the prepared pan.

Step 3
Bake in the preheated oven until brownies are set and a toothpick inserted into the center comes out clean, about 20 minutes.

Step 4
Remove from the oven and allow to cool completely, 20 to 30 minutes.

Step 5
While the brownies are cooling, make the frosting: Beat butter in a large bowl until smooth. Add Irish cream liqueur and beat until creamy. Slowly beat in confectioners' sugar, 1 cup at a time, until frosting is desired stiffness.

Step 6
Spread frosting on cooled brownies. Cut into 30 squares.

    These brownies were just as described – gooey, super sweet and addictive! They were very simple to make and well enjoyed at the St Pats party last night. I did have to cook the brownies a bit longer than 20 minutes. Bravo!

    i want to put an icing over my brownies but not sure if i use this rrecipe can i put a chocolate glaze over it ?

    Waaay too much butter for the frosting.. 1 cup is just too much, why not just eat a stick of butter lol. 1/2 cup or even less would be ideal. i had about a 1/2 inch of frosting on the brownies and still had a heap of frosting left over.

    other than that they were amazing, i actuallly started giggling with the first bite… so sinful 🙂

    These were good, yes would make again in a pinch. But, I don’t care for boxed brownie mix.

    These are great! I did not use the icing. Thought it would be too sweet. I added chocolate chips and walnuts.

    I made these exactly how the recipe reads and they were excellent. I would definately make them again I did use the icing which is basically a butter frosting. The brownies do not need frosting but they are great with or without it.

    This brownie is deliciously rich, so rich that half are still sitting on my kitchen table even after a St. Patty’s day party… Everyone loved them but could never eat a whole brownie themselves. It was the icing. I even cut the butter down to a half cup (used light earth balance butter trying to cut calories where I can) and I just kept having to add more confectioner’s sugar. It was a bit ridiculous with probably a quarter inch of icing, maybe more at some spots.. I added green food coloring to the icing for fun. And dark chocolate chips to the brownies. They melted, kind of a waste. They weren’t at all necessary. There is enough going on with this recipe as is. Probably wouldn’t make the icing again..but I will definitely be using this brownie in future desert endeavors.

    Delicious! I made this in an 8 x 8 pan and halved the recipe. For the frosting I creamed together equal parts butter, cream cheese, and butter-flavored Crisco, 2 T Bailey’s, and then just added powdered sugar until it reached the consistency I wanted. I had quite a bit of frosting leftover, too, which I put on PB cookies. 😉

    This recipe was a huge hit. Very moist but there was a definite baileys taste. Next time I make it ill likely use less. But this is great as is.

    These brownies were soooo tasty. You can really taste the Bailey’s. I brought it to a party and it was GONE so fast!

    My friend made this for our girls night for St. Patty’s day and OMG it was incredible! She said she followed the directions and I plan to do the same because I couldn’t stop picking at it. The frosting is amazing and I will be making it soon to add to some chocolate cupcakes.

    I would cut back on the frosting….just my taste preference! Very good though!

    I made these a little different, but they turned out great! I used one box of brownie mix, 2/3 cup oil, 2 eggs, and 1/4 cup Irish cream instead of the water called for on the box. For the frosting, I used a cube of butter, 2 cups of powdered sugar, and 2-4 tablespoons of Irish cream. It was so good, and you could definitely taste the Irish cream!!!

    This has made us quite popular for years at St. Patrick’s Day pot luck type parties. We call it “Bailey’s & Bushmills Brownies” since we split the alcohol 50/50 between the Bushmills Irish Whiskey and the Bailey’s Irish Cream. Also, we put up a sign “Adults Only”. We have had to double up on the quantity we bring since they have gotten so popular that our brownies disappear ahead of the entries … 🙂 …

    Wow! These are delicious brownies! I followed the recipe exactly. The Bailey’s flavor is just perfect. Have these in the evening with some decaf coffee and you will be set!

    I have made these brownies if you times now. They are the biggest hit every time. I make the brownies exactly as instructed. They tend to need to cook longer.

    THe brownies, without the frosting, were very gooey. I couldn’t get them out of the jelly roll pan but they tasted great anyway. They are very moist.

    These brownies were amazing! Easy to make, moist and the Bailey flavor popped in the brownie and icing. Definitely planning on making this again.

    The biggest brownie mix that I found was Betty Crocker at 17.8 oz. That is 2 oz less than called for in the recipe. I don’t know if this is the reason the brownies stuck to the pan. At this point, I decided not to make the frosting since it would be almost impossible to frost these broken up brownies. They are very good as is and probably even better with the frosting. But because of these issues, I will not find out since I will not be making them again.

    Did not like these brownies. Might have been all right if they weren’t boxed. And why use two boxes of brownies? One would be fine.

    I think it turned out deliciously! I added a little green gel coloring to the frosting for St. Patrick’s Day. I have been wanting to make this and the Bailey’s was really obvious in the brownie and frosting. I used a 9×13″ pan. I baked about 20 min longer and it still turned out very moist. Also I bought a milk chocolate brownie mix. I don’t know if that made a difference in it’s taste. It’s very easy and quick to make last minute.
