I make this baked oatmeal with applesauce on weekends for the kids to eat throughout the week. I double the recipe with no problems. It is a great way to use up the applesauce in the fridge.
Ingredients
- 1 ½ cups quick-cooking oats
- ¼ cup white sugar
- 1 teaspoon baking powder
- ¾ teaspoon salt
- ½ cup milk
- ¼ cup butter, softened
- ¼ cup applesauce
- 1 egg, beaten
- 1 teaspoon vanilla extract
Directions
Step 1
Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking dish.
Step 2
Combine oats, sugar, baking powder, and salt together in a bowl. Add milk, butter, applesauce, egg, and vanilla extract; mix until a smooth, thin consistency is reached. Pour oatmeal into the prepared baking dish.
Step 3
Bake in the preheated oven until edges are golden, 25 to 30 minutes.
Tips
You can bake this in muffin tins for individual serving (fill 3/4 full). Before you bake, add some canned raspberry pie filling to the top.
