This easy apple and avocado salad is perfect for a hot day. You wouldn’t think a mixture of apples, avocados, blue cheese, and tangerine dressing would go together, but it’s wonderful!
Ingredients
Dressing
- 4 tangerine oranges, juiced
- 2 tablespoons olive oil
- ½ medium lemon, juiced
- 1 clove garlic, minced
- ½ teaspoon lemon zest
- salt to taste
Salad
- 1 (10 ounce) package baby greens
- ½ cup chopped walnuts
- 1/3 cup crumbled blue cheese
- ¼ cup chopped red onion
- 2 teaspoons lemon zest
- 1 medium apple – peeled, cored and sliced
- 1 medium avocado – peeled, pitted and diced
Directions
Step 1
Make the dressing: Combine tangerine juice, oil, lemon juice, garlic, lemon zest, and salt in a lidded container. Seal and shake until well combined.
Step 2
Make the salad: Toss baby greens, walnuts, blue cheese, onion, and lemon zest together in a large bowl.
Step 3
Mix in apple and avocado. Drizzle dressing over top and toss to coat.
Tips
To make ahead, complete Steps 1 and 2, then cover and refrigerate salad. Continue with Step 3 when ready to serve.
