Roasted broccoli made in the air fryer and served with a savory queso fresco cheese sauce makes a quick and easy side dish.
Ingredients
- 6 cups broccoli florets
- 10 tablespoons low-fat evaporated milk
- 5 queso fresco, crumbled
- 4 aji amarillo paste or other hot pepper paste
- 6 saltine crackers
Directions
Step 1
Preheat an air fryer to 375 degrees F (190 degrees C).
Step 2
Coat broccoli florets with cooking spray. Put half of the florets in thefryer basket. Cook until crisp-tender, 6 to 8 minutes. Repeat with remaining broccoli.
Step 3
Meanwhile, add evaporated milk, queso fresco, aji amarillo paste, and saltines to a blender; process until smooth, about 45 seconds. Pour sauce into a bowl. Microwave until warm, about 30 seconds. Serve with broccoli.
