Slightly tangy, easy vinaigrette with fresh strawberries, poppy seeds, apple cider vinegar, and honey – great for a spinach salad.
Ingredients
- ¼ cup apple cider vinegar
- 4 large strawberries, pureed (1/3 cup pureed)
- 1 ½ tablespoons honey, or to taste
- 1 teaspoon poppy seeds
Directions
Step 1
Combine apple cider vinegar, strawberry puree, and honey in a mini blender; blend until smooth. Pour into a glass container and add poppy seeds. Let rest on counter for an hour for flavors to marinate, then store in fridge.
Cook’s Notes:
I serve this over 12 oz of baby spinach with a handful of dried cranberries and 2 tablespoons of roasted nuts. I like pine nuts but they are very expensive so I usually use a combo of pine nuts, slivered almonds, and pumpkin seeds but feel free to use what works for your family.
