This is ready in 15 minutes. "A nice light and healthy meal, and very delicious," says BATCAVES. Cooked rice noodles mix it up with carrots, cucumbers, mint, and napa cabage, topped with a snappy dressing of lime juice, jalapeno peppers, fish sauce, and cilantro.

"The wonderful national noodle dish of Thailand, this is a recipe for those who like it HOT," says Fatty Arbuckle. "We loved this simple and delicious recipe! I used two pounds of chicken but kept the rest of the ingredients the same and there was still plenty of sauce," Christina says.

"Wonderful! Tasted just like my mom's pancit! I used rice noodles and soaked them for about 10 minutes did the trick, but make sure to break the noodles before soaking them or you'll have some really long noodles. The noodles, when cooked, will come out with an al dente texture to them. Even Mom's leftovers still had that a day or two later," Jeanne Cupertino says.

"This was very tasty," says Chicken. "Next time, I might add a touch more curry powder, but I followed the recipe exactly this time and found it quick and easy."
