Bread Pudding in the Slow Cooker

Cook's Notes: Toast bread pieces for best flavor. For a richer pudding, use a higher-percent-fat dairy product. Cream can be used to create a richer pudding, vanilla soy or rice milk can be used, but plain soy milk affects the taste. Spiced or cinnamon raisin bread can be used; if using, omit spices and/or raisins. Apple chunks can be substituted for raisins; reduce milk if using apple chunks. White, brown, or maple sugar can be used. If you want more of a maple-flavor, add 1/4 to 1/2 teaspoon maple extract or flavoring.

"This is SO good," says Tammy Lynn. "I love how creamy it is. It is just like pumpkin pie with no crust. I added the vanilla with all the ingredients and didn't stir it when it was done. The one big issue is that it was done at 2 hours on low, and it started to burn. There is no way this could cook 6-7 hours. Check this at 2 hours and continue if needed." Slow Cooker Fruit Cobbler

This slow cooker version of a dump cake couldn't be easier. You simply dump fruit in your slow cooker along with cornstarch, vanilla, brown sugar, cinnamon, and nutmeg. Next, you dump in cake mix and melted butter. That's it. Home cook burgundybooks adds, "One hint I saw from another recipe that I think helped with this one is that I put a long strip of paper towels between the lid and the crock pot to catch the cooking condensation – and I changed the towels when they appeared to be getting pretty damp. This helps the crust crisp up and not be soggy."

The pudding was rich, loaded with vanilla flavor, and very creamy. Although I'm not a huge slow cooker fan, this is one recipe that I would make again."
